Girl Scouts’ Winning Ways (BBQ Edition)

I have no problem identifying why the following story from Connecticut’s Greenwich Post appeals to me: BBQ Ribs and Girl Scouts. What a great combo. In a local contest the girls of Troop 50168 (holy cow; that’s not a troop number. That’s a zip code) beat the pants off the competition which was awkward since the event was held at Christ Church. According to the story, which has a great slide show of the event (so you should go to their site) the winning ribs are prepared as follows.
Baby back pork ribs or country style ribs (quantities for about 4 lbs.)
Dry Rub:
2T. Salt
3T. Brown Sugar
3T. Granulated Sugar
2T. Dried Lemon Peel
1T. Paprika
1t. Black Pepper (more if you like it spicier)
Combine together and store in an airtight container.
Barbeque Sauce:
8 ounce can of tomato sauce
¼ cup ketchup
1/3 cup brown sugar
¼ cup vinegar
2T. prepared mustard
½ cup chopped onions
1 clove minced garlic
1t. chili powder (more if you like it spicier)
Rub ribs on both sides generously with dry rub and refrigerate overnight (up to 24 hours). Next day bake ribs at 350 degrees until done (about 1.5 hours for baby backs and 2 hours for country style ribs).
Then, you finish the ribs on the grill. You can either dip in barbeque sauce and grill basting with barbeque sauce until there is a nice coating on the ribs or you can place ribs in pot and cover with the sauce, refrigerate and finish off on the grill later.
Mmmmmm. Is it dinner time yet? I’ve got a related issue that is a problem for my Girl Scout troop. We challenged my son’s Boy Scout troop to a chili cook-off. So, which kid gets the family recipe? I think it should be my daughter because the boys have Gunther as one of the Assistant Scoutmasters and he is literally a card-carrying member of the International Chili Society. I’ve tasted his chili. It’s scary good. I’m a little worried about him coaching the boys. On the silver lining side of the cloud, though, I’ll get great chili either way and I’m a leader in both troops so I can’t possibly lose.
