One Pot Pack-up Pie

Here’s what happens on the Sunday morning on my campouts when we’re leaving. I’m up early because I always sleep fitfully. So, I start packing up my stuff and go out to start some water boiling for coffee or hot chocolate. Around the time we’re supposed to wake up I start getting a little louder with my packing up and going to the restroom. If the SPL is late I give 5 or 10 before I make sure he’s getting up and getting the rest of the guys up.
Then begins the arduous process of getting everyone packing or cooking depending on their speed and assigned duties. For those most interested in getting out with the minimum effort, the boys with try to skate by on pop tarts and fruit. But that was before I read the Trainer’s Corner. Now we can have a hearty breakfast that cooks while you pack and has little in the way of clean-up. Get out your dutch oven.

I had a real positive response to my dutch oven dessert recipe, so I thought I’d share one more. Our Cub Scout den’s favorite breakfast was a breakfast one-pot casserole. A portion of it was prepared at home, so it was easy to make at a campout. It was so good we would double the recipe you see below and make two batches and cook it in two dutch ovens. We served this with my wife’s salsa (which is so, so good, and a closely-guarded secret) and we could empty out a dutch oven in no time. The boys and the adults liked this recipe!
Pre-cook 1lb bulk sausage and 1lb shredded hash browns at home.
Put cooked sausage and potatoes in the dutch oven first.
Next beat 18 eggs and mix w/ 1 cup shredded cheddar cheese (if you don’t mix the cheese and the eggs it will burn).
Pour egg and cheese mix over sausage and potatoes and then top with can of refridgerator biscuits.
Coals are usually placed 4 on top and 4 on bottom of a 12″ dutch oven, but adjust as you need to keep from burning. Takes about an hour.

The biscuits are right at the top, so it’s easy to burn them if you’re not careful.
Since I won’t divulge my wife’s salsa recipe, you can use whatever salsa or hot sauce you like to spice it up. A good salsa really compliments this breakfast dish.

If your guys prepare their charcoal chimney the night before all they have to do is light it with a match, then put the ingredients together, and start packing. With a slight break to arrange the dutch oven and coals and then another hour for packing up everything but the wash-up stuff, you’ll be ready to hit the road 15 minutes after you’ve enjoyed a sumptuous breakfast on the last day of camp. Hit the road or now have time for an extra hike or the Scouts’ Own you always wanted to do. It’s your choice because your tummy is satisfied and your gear is packed up. Enjoy!

Thats a great recipe. That will save lots of time next time I’am out with my scouts you could also use bacon instead of sausage for your recipe.
